strawberry balsamic smash

I’m not going to lie y’all, I felt like a total rock star making this drink.  When I’m at home, I usually just have wine or beer, and if I do have a cocktail, it’s something simple like a gin and tonic.  But I was so intrigued by the idea of a drink with strawberries and balsamic vinegar that I found myself whipping up a quick simple syrup for the first time ever (it really is simple — please never buy it again!).  Bon Appetit is totally right in saying, “Fresh, sweet, and tart, this one has it all.”

Strawberry Balsamic Smash

2 1/2″ lime wedges
2 1/4″ cucumber rounds
1 strawberry (leaves removed)
1 tablespoon simple syrup (make your own!)
1/2 teaspoon balsamic vinegar
1/4 cup gin

In a cocktail shaker or large glass, add all ingredients except gin.  Mash together using a muddler the handle of a wooden spoon.  Shake 4-5 times.  Add gin and shake once more.  Strain and pour over crushed ice in an old fashioned glass.  Garnish with a cucumber round.
