Housemade Roasted Garlic

You know that saying, “You can never be too rich or too skinny?”  Well, I think if there was a culinary equivalent, it would be that your food can never be too cheesy or too garlicky.  I ate this whole bulb plain and by myself.  Oops.  Sorry I’m not sorry.

Housemade Roasted Garlic

1 (or more) bulbs of garlic
Olive oil
Salt
Pepper

Cut top off of  garlic bulb exposing tops of most or all cloves.  Drizzle olive oil over bulb(s), season with salt and pepper to taste.  Wrap in aluminum foil or parchment paper.  Cook in 400 degree oven for 30-40 minutes or until completely soft when poked with a fork.

Chef’s note:  this is absolutely fabulous when spread onto crusty French bread, sauteed with green beans, or added to pasta.
