Mayo-Free Egg Salad with Avocado & Spinach

I think this is a such a fabulous (and healthy) twist on a classic dish!  And just like the original, it’s super easy to make.  I modified this recipe and loved the outcome, but it’s a pretty versatile group of ingredients, so add whatever your heart desires!

Here’s what you need:

And here’s what you do…

Hard boil your eggs (duh) and add them to a mixing bowl with the Greek yogurt.  Add a little salt and pepper (perhaps some garlic powder?) to taste and mash everything together with a fork until well combined.  In a separate bowl, mash avocado.  If you’d like, you can add some salt and pepper to this bowl too.

Combine avocados with the egg mixture and add the spinach, celery, and onions.  Stir.  

Serve on bread as a sandwich or for a low-carb option, serve in a pita pocket!
