Quick & Easy Broccoli with Cheese Sauce

Four hundred and eighteen pot-luck holiday parties to attend and no time to cook?  Yep, sounds about right.  This quick and easy broccoli with cheese sauce can save you time in the kitchen and money in the bank.  Bonus:  It’s a small respite from the traditionally casserole-heavy holiday fare, but the cheese sauce tastes so rich, no one will notice!

You will need:

  • 1 1/2 pounds of broccoli
  • 1 medium tomato (optional)
  • 2 tablespoons butter or margarine.
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1 cup (4 oz.) shredded sharp cheddar cheese

To start, cook 1 1/2 pounds of broccoli however you normally cook your broccoli (pressure cooker, steamer, etc.).  When the broccoli is almost cooked, start melting the butter in a small sauce pan over medium-high heat.  Drain broccoli and arrange in dish with stalks facing inward.  Once butter is melted, blend in flour and salt.  Stir in milk.  Heat until mixture boils and thickens, stirring occasionally.  Blend in cheese until smooth.  Drizzle cheese over broccoli (I like to do less on the florets and more in the center) and garnish with tomato slices.
